Hi
I too have this issue with the Stereo Mix function disappearing. It was certainly accessible a few months ago.
I use an HP Elitebook p - Win 10 Professional 64bit.
The stereo mix icon was Realtek. Went to their website after seeing a Youtube video and downloaded their High resolution codes for 64 bit win Sadly this has not worked either.
As a professional audio engineer I really am missing this function.

OK, you'll probably find the device is disabled and hidden.
Firstly, right click on the volume icon in the system tray and select "Recording devices"
This should open a panel similar to that below.
Next, right click in the panel and select "Show Disabled Devices"
You should now see the "Stereo Mix" in the panel but it will be disabled
Right click the device and select "Properties"
Now select "Use this device (enable)" next to Device usage
You should now see the "Stereo Mix" device enabled and ready to use.
Hope this helps.
